Hola! My name is Casey Coyle, but my friends call me Case-Uh-Dilla. I am a senior at the University of Kentucky studying Spanish with aspirations of becoming a high school Spanish teacher. Originally, I am from Edgewood, in Northern Kentucky, where I have lived all my life, but I like to call Lexington home too. I volunteer my free time with a Christian ministry called Young Life at Tate’s Creek High School. I love to travel and my dream is to live in a Spanish-speaking country someday. I am passionate about sharing Christ’s love, speaking Spanish, drinking coffee, learning other cultures, and fighting for equality.
This blog is primarily based out of my WRD 422-001: Taco Literacy class this year focusing on Mexican foods and the history and details on ingredients, cooking process, and taste. Thanks for stopping by! Enjoy reading my take on Hispanic cuisine!
